I just bought a Wine Making kit makes 6 bottles, what do I have to do to do more on the comprimising taste or volume of alcohol, also bought a 5 gallon plastic tube with a lid, but there are no holes in it for a cap with air lock do i need to use a plug or I can simply leave the lid on.
